Fudgy Black Bean Brownies (Gluten-Free, Egg Free)

Fudgy black bean brownies. You’ve sampled them. You’ve loved them. You’re amazed that there is a whole can of black beans blended in to these babies. AND, they’re gluten-free & egg-free! Now here’s the recipe…
Ingredients
Prep Time: 5 minutes
Cook Time: 15 minutes
Total Time: 20 minutes
Yield: 16 brownies
1 15 ounce can black beans, rinsed thoroughly
⅔ cup dark chocolate* (chips, chunks or bark)
½ cup quick oats (gluten-free oats available at Trader Joe's)
½ cup real maple syrup
¼ cup canola oil (use organic if GMOs are a concern)
2 tablespoons cocoa powder
1 teaspoon real vanilla extract
½ teaspoon baking powder
¼ teaspoon salt
Method
Preheat oven to 350 degrees. Prepare an 8x8 or 9x9 baking dish.
Combine all ingredients in the bowl of a food processor & blend until smooth. (I use my Vitamix.)
Pour batter into the prepared baking dish.
Bake for 15 minutes, then let stand for at least 15 minutes before cutting.
Variations
*Use carob chips if you would like vegan brownies.
